Happy New Year! I have heard that every year, the number one New Year's resolution is to lose weight. In this column, I have included some low-fat versions of some yummy appetizers. Of course, you can always make them fattening by substituting ingredients that are not low-fat. These can easily help bring in the New Year or go as well at a Super Bowl party!
Reuben Bites
- 6 slices of pumpernickel or rye bread cut into quarters, or mini-party breads
- 1/4 cup diet Thousand Island dressing
- 8 oz low-fat Swiss cheese cut into pieces
- 1/4 pound cooked corned beef, lean cut into 24 pieces
- 1 cup sauerkraut, drained
Preheat oven to 350 degrees. Coat baking sheet with non-stick spray and place bread on baking sheet. Spread each piece of bread with 1/2 tsp Thousand Island dressing. Layer with Swiss cheese, corned beef and tsp sauerkraut.
Bake for 15 minutes. Serve immediately.
Won Ton Turkey
- 1 package of 24 wonton wrappers
- 2 cups low-fat shredded mozzarella cheese
- 1 cup sharp low-fat cheddar
- 5 ounces sliced black olives
- 12 ounces Jimmy Dean ground turkey or low-fat sausage
- 1 1/cups low-fat ranch dressing
Preheat oven to 350 degrees. Spray muffin tins to make dozen. Place wonton skin in each muffin cup, pressing down bottom and keeping sides even. Bake 5-8 minutes, just until golden brown. Take out of muffin pan to cool. Cook sausage or turkey and drain well. Mix remaining ingredients together and fill each wonton, then place on cookie sheet and bake for an additional 10-15 minutes at 350 degrees until cheese is bubbly and melted.
Chicken Dip
- 1 10 oz can of chicken
- 1 dry package of vegetable soup mix
- 8 oz light mayo
- 8 oz light sour cream
- 1 cup low-fat shredded cheddar cheese
Mix ingredients together and serve with crackers.
BBQ Meatballs
- 1 1/lbs lean ground turkey
- 1 cup uncooked quick oats
- 2 medium egg whites
- 1 large onion, finely chopped
