Stimulus Suppers

When tightening your budget, some new recipes could be in order. Here are some low- cost hot dish ideas.

Stroganoff

16 oz package of egg noodles

1 lb ground turkey or beef

1/2 onion, minced

1 packet dry brown gravy mix

8 oz pkg cream cheese, lite

6 oz can mushroom pieces, with liquid

1/2 cup milk, skim 8 oz container sour cream, lite

two 10.75 oz cans cream of mushroom soup

1/2 tsp pepper

Cook egg noodles according to directions. In skillet over medium heat, brown ground burger with onion and pepper. Drain fat. Mix brown gravy, cream cheese and mushrooms with burger until it begins to simmer; turn down heat and simmer for about 5 minutes. Add milk, sour cream, and mushroom soup, blend together well and heat for another 5 minutes (do not boil). Mix with hot pasta in serving bowl. Serves 6

Tuna Noodle Casserole

16 oz package uncooked pasta shells

two 6 oz cans tuna, drained

10 oz can cream of mushroom soup

10 oz can cream of chicken soup

1-1/4 cups milk

1 tsp salt

1/2 tsp black pepper

1 tsp garlic, minced

1 cup shredded cheddar cheese

1-1/2 cups crushed potato chips

Boil pasta according to directions, drain and return to pot. Preheat oven to 350 degrees, spray a 2-1/2 qt casserole dish with cooking spray. Mix tuna with soups, milk, salt, pepper and garlic in medium saucepan over low heat. Mix tuna mixture with pasta and pour half into casserole dish, sprinkle cheese and pour remaining tuna mixture on top of cheese.

Top with potato chips and bake uncovered for 20 to 30 minutes. Chips will begin to brown. Let cool for about 10 minutes before serving. Serves 8

Strawberry Angel

10-inch angel food cake, prepurchased or made ahead

8 oz pkg cream cheese lite, softened

1 cup of white sugar or Splenda®

8 oz container of Cool Whip lite, thawed

1 quart fresh strawberries, sliced and cleaned

18 oz jar strawberry glaze (can use sugar-free

Crumble cake into a 9 x 13 dish. In medium bowl, mix cream cheese and sugar until light and fluffy. Fold in whipped topping. Mash the cake down with hands and spread the cream cheese mixture over cake. In a bowl, combine strawberries and glaze until strawberries are evenly coated. Spread over cream cheese layer. Chill until serving. Serves 18
