According to recent studies published by the Cranberry Institute, cranberries can serve as a good source of supplemental antioxidants and protect our bodies from the harmful molecules to which we are exposed every day of our lives. Some of the studies have shown cranberries to be a potent cancer fi ghter. Cranberries may help protect the brain from neurological damage, prevent cavities and gum disease, reduce the risk of heart attack, and assist in the prevention of peptic ulcers. Cranberries are another food that tastes good and is good for you. Plus, it is the only food my mother would let us play with. At Christmas we would get together as a family and string cranberries and popcorn to make garlands. We decorated the tree with them.
Cranberry Pineapple
- Relish
- 20 ounce can crushed pineapple
- in its own juice
- 6 cups frozen cranberries
- 1-1/4 cups sugar
- 1 cup chopped walnuts
- 1 T fresh lemon juice
- 1/4 tsp ground cloves
Drain pineapple over measuring cup and add enough water to make 2 cups of liquid. Pour liquid into non-reactive saucepan; add the cranberries and sugar. Stir over high heat until the sugar dissolves, cooking it at a boil until most of the cranberries pop and the mix-ture is thick, about 10 minutes. Remove pan from heat and add pineapple, walnuts, lemon juice and cloves. Transfer relish to serving bowl and refrigerate uncovered until cold, about 2 hours. Cover until ready to serve.
Cranberry Ice-Cream Pie
- 9 inch chocolate crumb
- pie shell
- 2 cups vanilla ice cream, softened
- 1 can whole cranberry sauce
- 1 T orange juice
- 2 cups whipped topping
- 2 T sliced almonds, toasted
Chill the pie shell in the freezer while preparing the filling. Place softened ice cream, cranberry sauce, and orange juice in a large bowl and stir until ingredients are well-blended. Spoon fi lling into the chilled shell and freeze the pie until fi rm (4 hours or more). Spread the whipped topping over the ice cream layer and sprinkle the almonds over the top. Cover the pie and return it to the freezer. Allow the pie to stand at room temperature for 20 minutes be- fore slicing. Serves 8.
