Spinach Recipes…Plus

Popeye would be proud! I am taking a nutrition class and although I have studied healthy cooking for years, this is a whole new concept for me. In the meantime, I have discovered a few nutritious recipes using spinach as an ingredient.

I’ve also included a cookie cheesecake (it isn’t exactly nutritious, but it is delicious and taste-tested by some of the pickiest eaters I know—my grandkids). You can even use Girl Scout cookies in the recipe!


Lasagna Alfredo Rollups

8 cooked lasagna noodles

1 T olive oil

10 oz pkg of frozen spinach, thawed and drained

1 cup cooked cubed chicken breast

1/2 cup chopped onion

1/2 cup mushrooms, sliced

1/2 tsp garlic powder

1 tsp black pepper

1/2 tsp sea salt

1 pint ricotta cheese

1/4 cup grated parmesan cheese

1 egg, beaten

21 ounces Alfredo sauce

1 cup shredded mozzarella cheese

Preheat oven to 375 degrees. In large saucepan, cook onions, mushrooms, garlic powder, and pepper, until onions are tender; add spinach and chicken. Remove from heat and add ricotta cheese, parmesan cheese, egg and salt. Mix together thoroughly. Spread half of the Alfredo sauce on the bottom of a 9x13 inch pan. Placing the cooked noodles one at a time on a sheet of waxed paper, spread filling evenly on each noodle, then roll up and place in pan seam side down and repeat. Top rollups with mozzarella cheese and remaining Alfredo sauce. Cover loosely with foil and bake for 30 minutes until cheese is melted.


Raspberry Spinach Salad

2 cups fresh spinach leaves

1/3 cup feta cheese

1/3 cup chopped walnuts

1 small container fresh raspberries

Mix all together in large bowl, then toss with pepper jelly dressing (recipe below).


Pepper Jelly Dressing

3 T pepper jelly

2 T olive oil

1 T vinegar (raspberry if you have it or apple cider will work)

1/2 tsp Dijon mustard

Mix ingredients together and heat in microwave for 30 seconds.


Cookie Cheesecake

One ready-made Oreo cookie crust

8 oz pkg cream cheese

8 oz container Cool Whip

1/2 cup sugar

10 cookies, crushed (your choice of Oreo cookies, mint chocolate, peanut butter)

In large bowl, mix cream cheese with sugar, then fold in Cool Whip and 8 crushed cookies, then put into the readymade pie crust. Top with remaining crushed cookies. I used the mint cookies, Girl Scout cookies work, too.
