Sunday Brunch

Growing up, Sunday was always the highlight of the week. After church, we would frequently go to our grandparents for a wonderful brunch. Today, Sunday brunch is still a treat as it is a great time to get together after a busy week and eat with friends and family.

These recipes are delicious and consistent with the healthy eating program I started at the beginning of the year. Readers, let me know if the nutritional facts in some of the recipes are of interest; I can post them on my Web site or in The Citizen, and would love to hear from you.

Italian Eggs

1 cup ground turkey sausage or sausage-style crumbles (veggie protein)

1/3 cup chopped onion

1/3 cup fresh mushrooms

1 tsp garlic, minced

1/4 cup sun-dried tomatoes

3/4 cup spaghetti sauce

1 - 8 oz carton liquid egg substitute or 6 egg whites

1 cup pizza cheese

Spray large skillet with nonstick cooking spray and heat to medium-high heat. Add sausage, onion, mushrooms, garlic and tomatoes.

Sauté until sausage is cooked; add spaghetti sauce and mix well. Spread evenly over bottom of the skillet and pour eggs on top, add cheese and cover with lid or foil. Reduce heat and cook for about 10 minutes. Cut into pie slices and serve. Serves 4-6

Caramel Apple Bread Pudding

1 cup (unsweetened) applesauce or shredded apples

1/4 cup packed brown sugar

1 cup vanilla soymilk or skim milk

1/2 cup egg beaters or egg whites

1 tsp vanilla

1 tsp cinnamon

5 cups 1 inch whole-grain bread or cinnamon raisin bread

3 T sliced almonds

1/4 cup fat-free caramel topping, warmed

Heat oven to 350 degrees. Spray 9- inch pie plate with cooking spray. In large bowl, mix all ingredients except bread, almonds and caramel topping with wire whisk until smooth. Fold in bread. Pour into pie plate, sprinkle with almonds and bake for 35 minutes, or until golden brown and set.

Cut into wedges and drizzle caramel topping over each serving.

Sweet Potato Hash Browns

2-3 T olive oil

1/2 cup sweet onions, diced

1 T garlic, minced

3 sweet potatoes, peeled and grated

salt & pepper to taste

In large bowl, combine all above ingredients. Heat the oil in a large skillet and add ingredients from bowl, fry over medium high heat to taste with salt and pepper, and cook 10 to 15 minutes, until potatoes are cooked through and crispy. Flip halfway through cooking to brown evenly. Serves 4
