An Apple A Day

According to several recent studies conduced in Finland, apples may provide a "whole body health benefit:" lower blood cholesterol, improved bowel function, and reduced risk of stroke, prostate cancer, type II diabetes and asthma may result. Besides all that, an apple tastes good and is good for you.


Apple-Cinnamon Wontons à la Mode

Pre-heat oven to 350 degrees. Coat large baking sheet with cooking spray. Combine apples, brown sugar, lemon juice and cinnamon; toss to coat. Place wonton wrappers on a flat surface. Drop apple mixture by teaspoons onto center of each wrapper. Moisten edges of wrapper with wet fingers, fold over one corner to make a triangle and press sides together to seal. Transfer filled wrappers to prepared baking sheet. Bake until wontons are golden brown, about 15 minutes. Place 4 wontons on individual plates and sift with powdered sugar. Serve with 1/2 cup ice cream on the side. Serves 6. Weight watchers points = 4. Also good if drizzled with caramel (fat-free caramel can also be used).


Grilled Brie & Apple Sandwiches

Spray large, nonstick pan with cooking spray. Cook onions over medium heat and sauté until soft and golden brown, adding cider as needed to prevent burning.

Layer apple slices, brie and caramelized onions on slice of bread. Cover with another slice. Spread sandwich with butter if you are not watching calories, or spray pan again and grill sandwiches until cheese melts and bread browns. Cut into halves and serve hot. Weight Watchers points = 6.


Caramel Apple Nut Crunch

Arrange apple slices on apple cinnamon rice cakes; drizzle each with 1 tsp of caramel topping. Sprinkle each with 1 tsp chopped nuts.
