Easy Spinach Dip
10 oz pkg frozen spinach, thawed and drained
16 oz pkg sour cream, lite
1 cup mayonnaise, lite
1 pkg Knorr Vegetable soup mix
8 oz can water chestnuts, chopped
3 green onions, chopped
1/4 tsp garlic powder
In medium bowl, mix together all ingredients. Cover and chill in the refrigerator about 2 hours before serving. Serve with pumpernickel bread for dipping.
Chicken Reuben Dish
3 skinless, boneless chicken breasts, sliced thinly in bite-sized pieces
1/2 tsp black pepper
1 /2 medium sweet onion, diced
16 oz can sauerkraut, drained
1-1/4 cups Thousand Island dressing
4-6 slices of Swiss cheese, cut into bite-sized pieces
Preheat oven to 350 degrees. Spray bottom of casserole dish with nonstick spray, place 1/2 can of sauerkraut in bottom of casserole dish. Then add onion, chicken, and dressing. Finish with final layer of sauerkraut and top with cheese. Cover and bake for one hour and spread on toasted pumpernickel bread.
Buffalo Chicken Wraps
four 10-inch tortillas of your choice
1 lb skinless, boneless chicken breasts, cut into bite-sized pieces
1/4 cup hot sauce
2 cups shredded lettuce
1 stalk celery, sliced
1/2 cup blue cheese dressing
Spray large skillet with non-stick spray and cook chicken over medium high heat. Cook and stir until chicken in no longer pink in the middle and the juices run clear, about 10 minutes. Remove from heat and toss with hot sauce. Lay out tortillas and divide chicken evenly among tortillas. Top with lettuce, celery and dressing. Fold sides of tortilla and roll the wrap burrito-style. Slice into 2-inch sizes and arrange on platter to serve. Can be served chilled.
