Favorite Fun Finger Foods

Superbowl Sunday is fast approaching! We get together with friends and eat finger foods.

Our family members and friends have shared their favorites.

Gabby's Crabby Rolls

1/2 lb Velveeta cheese

8 T butter, divided

1 can lump crabmeat

20 slices sandwich bread

Sesame seeds

Melt the Velveeta and 4 T of the butter in microwave oven; add crab. Flatten 20 pieces of bread with rolling pin. Spread mixture on bread; roll up, using toothpicks to hold together. Can be frozen ahead of time. When ready to use, cut each roll into 3 pieces. Melt remaining 4 T butter; dip pieces in butter, then roll in sesame seeds. Bake at 400 degrees for 10-15 minutes until golden brown.

Sassy Chicken Tortillas

1 pkg large tortillas (cheddar jalapeño is my favorite)

18 oz pkg lite cream cheese, softened

2 large cans of shredded chicken breast (or you can grill your own; shred to make 1 cup)

1 10 oz can of diced tomatoes with green chilis

1 tsp garlic, minced

1 T chili powder

1 tsp cumin

1 tsp dried oregano

1 tsp paprika

Soften cream cheese. Mix all ingredients together and blend well. Spread evenly over tortillas using rubber spatula, roll tightly, cover and refrigerate. Right before serving, slice into rounds and place on serving plate.

Ross's Slop

(Created by a friend on a low-carb diet)

1 lb ground turkey

1 med sweet onion, chopped

1 T garlic, minced

1 tsp cumin

1 tsp chili powder

4 oz lite cream cheese

1 cup shredded cheddar cheese, lite

1 cup chunky salsa

1 can black beans, rinsed

1 package of multi-grain tortilla chips

Brown turkey with onion, garlic, cumin and chili powder. Mix in cream cheese, cheddar, salsa and black beans.

Place into a crock pot and keep on warm or low setting. Serve with tortilla chips.

Little Smokeys

1 lb bacon, cut into thirds

1 14 oz pkg little smokey cocktail wieners

3/4 cup brown sugar or to taste

Preheat oven to 325 degrees, wrap each wiener with bacon and secure with toothpick. Place on large baking sheet. Sprinkle with brown sugar and bake for about 40 minutes or until the sugar is bubbly. Place cooked wieners in slow cooker and keep on warm or low setting.
