I tried the following recipes and, of course, wrote them down so I could share. Th e "Hop Sing Salmon" was very good, low-fat and healthy for you. "Buddy's Bacon Scallops" is not a low-fat recipe but so worth the calories. Enjoy!


Hop Sing Salmon


Marinade

Mix together marinade ingre- dients; marinate salmon in mari- nade mixture for 2-8 hours in re- frigerator. Heat a ridged grill pan over medium high heat until hot. Place salmon in pan and cook 4 minutes each side or until salmon is opaque and firm to the touch.


Buddy's Bacon Scallops w/ Spicy Mayo

  • 1 1/2 lbs large scallops
  • 1/2 lb of thin bacon
  • olive oil
  • sea salt & black pepper

  • Spicy Mayo

  • 1 cup mayonnaise
  • 1/4 cup hot chili paste
  • 1 lime
  • 2 T chopped cilantro
  • Heat broiler or grill with seafood grill pan. Wrap each scallop with a piece of bacon and secure with toothpick. Cut off excess bacon and use to wrap next scallop. Place on baking sheet or grill pan. Drizzle with olive oil and season with salt and pepper. Cook scallops under the broiler for about 10-15 minutes or grill over medium heat for about 5 minutes or until bacon is cooked thoroughly. Turn once. Mix together the ingredients for the spicy mayo and serve with scallops. This can be served as an appetizer or main course.
