Debi's Hot DishesGrilled Kabobs |
One of my favorite meals to cook on the grill is kabobs. Although they are a lot of work to make, they are worth it as they are delicious, very filling and make a complete meal.
I have included some of my favorites from my new "Happy Trails" cookbook. Enjoy!
Cowgirl Corral Chicken Kabobs
- 1/4 cup soy sauce
- 1/4 cup cider vinegar
- 2 tablespoons honey
- 2 tablespoons canola oil
- 1/4 cup onions, minced
- 10 large mushrooms, cut in half
- 3 skinless, boneless chicken breast halves, cut into chunks
- 1/2 pound sliced bacon, cut in half
- 1 (8 ounce) can pineapple chunks, drained skewers
- 1 T plain yogurt
- 1/4 tsp dry mustard
- 1/2 tsp curry
- 1 tsp lemon juice
- pinch of cayenne pepper
- 1/2 tsp lemon pepper
- 1 tsp vinegar
- 1 large chicken breast, boneless, skinless, cut into 1-1/2 inch chunks
- 1 medium sweet onion, cut into chunks
- grape or cherry tomatoes
- skewers
- 1 cup lemon juice
- 1/2 cup apple cider vinegar
- 1 medium onion, shredded
- 1 tsp garlic, minced
- 1 tsp lemon pepper
- 1 tsp Italian seasonings
- 1-1/2 lbs steak of your choice

- 1 fresh lemon
- 1 medium onion
- fresh whole mushrooms
- green pepper
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 2 T olive oil
- 1/2 tsp ginger
- 1/2 tsp lemon pepper
- 2 tsp garlic, minced
- 1-1/2 lbs steak of choice (sirloin, flank, round), cut into 1-1/2-inch pieces
In a large bowl, mix the soy sauce, cider vinegar, honey, canola oil, and onions. Place the mushrooms and chicken into the mixture, and stir to coat. Cover, and marinate in the refrigerator overnight or at least 1 hour.
Preheat grill for high heat.
Wrap the chicken chunks with bacon, and thread onto skewers so that the bacon is secured. Alternate with mushroom halves and pineapple chunks.
Lightly oil the grill grate. Arrange skewers on the prepared grill. Cook 15 to 20 minutes, brushing occasionally with remaining soy sauce mixture, until bacon is crisp and chicken juices run clear.
Egyptian Express Kabobs
Marinade
Mix together:
To make marinade, combine yogurt, mustard, curry, lemon, peppers and vinegar. Add chicken chunks and let stand for at least one hour or refrigerate overnight.
Skewer chicken, onion and tomatoes, grill on low to medium heat, brushing with leftover marinade sauce until chicken is tender.
Rockin' Ranch Kabobs
Marinade
Mix together and set aside:
Marinate meat overnight in refrigerator, then skewer meat, tomatoes, lemon, onion, mushroom, and green pepper, alternating on the skewer. Oil grill and grill kabobs over medium-high heat for about 6 minutes; then turn to other side.
Urban Cowboy Kabobs
Mix all ingredients together in bowl, marinate overnight in refrigerator, stirring occasionally.
Place meat on skewers with green pepper, cherry tomatoes and onion, alternating on the skewer.
Grill for 6 minutes on each side and serve with white or wild rice.
