Tomato Recipes

Tomatoes are so abundant right now! I have been busy making salsa, spaghetti sauce, tomato salad, dried tomatoes and trying to find 101 ways to use the tasty fruit.

Tomatoes are rich in lycopene (the stuff that makes tomatoes red). Study results have shown that diets rich in lycopene may prevent certain forms of cancer. Tomatoes contain 93% water and it is recommended you keep them at room temperature in order to retain the flavor enzyme.


Blanching Your Tomatoes

In preparation for making salsa or spaghetti sauce, blanch your tomatoes as follows: wash tomatoes and cut tops off, set them in hot water, bring to a boil and when skin starts to peel, place them in cold water and peel.


Fresh Salsa

Mix all ingredients together and marinate at room temperature for an hour or several hours in the refrigerator.


Fresh Tomato-Pineapple Salsa

Combine all ingredients; serve with chips or with grilled or broiled chicken or fish.


Tomato Feta Tart

Divide pastry into four portions, place on baking paper on baking sheet. Prick inner section of each square with a fork. Arrange tomato slices in center; scatter chopped olives & feta cheese on top. Season with salt and pepper, drizzle with olive oil; Paint exposed pastry edges with egg. Bake at 375-400 until crisp and golden brown, about 15-20 minutes. Serve warm.
