These are great recipes for hot weather. Homemade grilled pizza doesn’t heat up your house. Everyone who has tried this delicious dessert— Rice Krispie Caramel Ice Cream—has raved about it. Serve it at your next bonfire!

Grilled Pizza

1-1/2 cups flour

1 egg

1 tsp baking powder

2/3 cup skim milk

1 tsp salt

1/8 tsp pepper

1 tsp Italian seasonings

1/2 tsp garlic powder

olive oil

1 cup spaghetti sauce

Your favorite toppings – pepperoni, onion, mushroom 1-to-2 cups mozzarella cheese

Mix together flour, egg, baking powder, milk and seasonings. Flour rolling pin and roll out crust. Brush grill grate and bottom of pizza crust with olive oil. Preheat grill to medium-high heat and place on grill about 2 minutes until it bubbles; flip over for another 2 minutes. Remove from grill and put on your favorite toppings.

Put the pizza back on the grill on medium heat just until the cheese melts—usually just another 2 minutes.

Grilled Sweet Corn with Cheese

4 ears sweet corn

1/4 cup butter, melted

1/4 cup grated parmesan cheese

Soak corn, in husk, in water for about 30 minutes.

Pull tassels from end of corn.

Place on grill over medium heat and grill for about 10 minutes each side. While you’re still outside, pull off husks. Brush corn with melted butter and sprinkle with parmesan cheese.

Rice Krispie Caramel Ice Cream Dessert

1 cup butter

1 cup brown sugar

1/2 gallon lite vanilla ice cream

5 cups Rice Krispies

1 jar caramel topping (can use sugar-free)

In large pot, melt butter and brown sugar over medium heat. Add Rice Krispies and mix well. Spray 9 x 13 pan with non-stick spray and pour half of mixture into pan; pat down smooth. Slice layers of ice cream and spread over Rice Krispie mixture, top ice cream with remaining half of mixture, and drizzle with caramel topping. Freeze for about 1 hour before serving.
