Souper Recipes

This is the time of year when soups taste good to me. I have tried a few new ones lately that were easy to prepare and a big hit at home. Also, I have used the crock pot for several recipes. This is very convenient as while I am away, my dinner is cooking itself!

I usually save chicken, roast beef and ham leftovers to use in my soup recipes. It is very convenient to freeze them, if I won't be making the soup right away. That way, when I'm ready to make soup, I can just pull the meat out of the freezer.


Souper Lentil Soup (Crock Pot)

Rinse and drain lentils; mix all ingredients together in crock pot. Cook on high for 3 hours or on low for 7-8 hours. Stir well before serving, and add salt, if needed. Serves about 12.


Souper Split Pea & Ham (Crock Pot)

Rinse and drain peas; mix all ingredients together in crock pot. Cook on high for 5 hours. Remove bay leaves before serv- ing and add salt, if needed. I like to add a dollop of sour cream in the middle before serving.


Souper Easy Lemon Chicken

In large pot over medium heat, combine all ingredients, bring to a boil, reduce heat and simmer until rice and spinach are tender, about 20-30 minutes. Add salt, if needed.
