This is the time of year when soups taste good to me. I have tried a few new ones lately that were easy to prepare and a big hit at home. Also, I have used the crock pot for several recipes. This is very convenient as while I am away, my dinner is cooking itself!
I usually save chicken, roast beef and ham leftovers to use in my soup recipes. It is very convenient to freeze them, if I won't be making the soup right away. That way, when I'm ready to make soup, I can just pull the meat out of the freezer.
Souper Lentil Soup (Crock Pot)
- 1- 16 ounce package dry lentils
- 2-14 ounce cans beef broth
- 3 cups water
- 1 chopped carrot
- 2 tsp minced garlicd
- 1 stalk chopped celery
- 1 medium chopped onion
- 2 cups leftover roast beef, chopped
- black pepper to taste
Rinse and drain lentils; mix all ingredients together in crock pot. Cook on high for 3 hours or on low for 7-8 hours. Stir well before serving, and add salt, if needed. Serves about 12.
Souper Split Pea & Ham (Crock Pot)
- 1- 16 ounce package dried split peas
- 2 cups cooked ham, chopped (leftover honey ham works well)
- 5 cubes, or tsp chicken bouillon
- 8 cups of water (add more for thinner soup)
- 1-1/2 cups chopped carrots
- 1 large potato, peeled and chopped (optional)
- 1 medium onion, chopped
- 1 tsp garlic
- 1/2 tsp dried oregano
- 2 bay leaves
- black pepper to taste
Rinse and drain peas; mix all ingredients together in crock pot. Cook on high for 5 hours. Remove bay leaves before serv- ing and add salt, if needed. I like to add a dollop of sour cream in the middle before serving.
Souper Easy Lemon Chicken
- 3 quarts chicken broth
- 4 cups cooked chicken, chopped (breast preferred)
- 1 cup of uncooked rice
- 1 large carrot, chopped
- 3 lemons, juiced
- 1 small bunch of fresh spinach, rinsed and chopped
- 1 medium onion, chopped black pepper to taste
In large pot over medium heat, combine all ingredients, bring to a boil, reduce heat and simmer until rice and spinach are tender, about 20-30 minutes. Add salt, if needed.
