Better Burgers

I have never had a big preference for a plain burger, but I have found the following recipes to taste fantastic. They are inexpensive and easy to make. Both ground chuck ground round make a great tasting, jucier burger. The buffalo turkey burger is amazing and so much healthier than buffalo wings.

Just a note: buffalo turkey burgers will be featured as a special at Kelly’s Bar & Grill in Centerville for a limited time.

Buffalo Turkey Burgers

First, prepare Blue Cheese Sauce and chill (see recipe be- low).

2 pounds of ground turkey (not real lean)

1/2 cup hot sauce plus 1/2 cup reserved

1/2 tsp poultry seasoning

1 tsp paprika

1/2 tsp cayenne pepper, or to taste

black pepper to taste

6 whole wheat buns

Lettuce leaves if desired

Lightly oil the grate and preheat the grill to medium-high heat. In large bowl combine ground turkey, hot sauce, poultry seasoning, paprika, cayenne and black pepper. Form into six 3/4 inch-thick patties; brush both sides of each patty with olive oil to help prevent sticking.Grill burgers for about 6-7 minutes over medium-high heat. Flip and brush the cooked side with 1 T hot sauce per burger and continue cooking for 5 more minutes or until juices run clear. Brush buns with olive oil or butter and grill for about 3 minutes or until golden brown. Top each bun with burger, then blue cheese sauce and lettuce.

Blue Cheese Sauce

1/2 cup sour cream

1/2 cup blue cheese

1 tsp Worcestershire sauce

4 large stalks celery, diced, approximately 1 cup

Mix together and refrigerate while preparing the burgers.

Jalapeño Cream Cheese Burgers

2 pounds ground chuck, ground sirloin or 80% lean ground beef

1 cup chopped jalapeño peppers

1 /2 cup onion, chopped

2 (8 oz) pkgs cream cheese, softened

1 tsp Worcestershire sauce

2 T minced garlic, 1 T reserved

1 tsp black pepper

8 whole wheat buns

Oil the grate on the grill, then preheat grill over medium-high heat. In large bowl, mix together beef, onion, jalapeño peppers, garlic and black pepper; form into 16 portions. In medium bowl, mix together cream cheese, garlic and Worcestershire sauce; set aside. Take each portion and form into a patty; add 1 large Tablespoon of cream cheese mixture and flatten on top of burger, adding another patty on the top to form a burger with the cream cheese sandwiched in the middle. Repeat until you have 8 burgers. Grill for about 10 minutes each side, taking care not to press down on burgers as they cook.
