For everyone who has made the New Year's resolution to drop some extra pounds, eating seafood can be a healthy way to help achieve that goal. Certain types of fish can be low in calories, low in fat, and high in protein.
Fish is a good source of vitamins B-6 and B-12, biotin and niacin. Fish is also a good source of a number of minerals, especially iron, phosphorus, potassium and zinc.
Certain varieties of seafood - like salmon - have high levels of healthy Omega-3 oils, which are liquid at room temperature. Those fats are far better than trans fats (hydrogenated oils) or saturated fats (solid at room temperature).
I have included two lowercalorie dishes and a seafood Alfredo dish that is very good, but is higher in fat and calories.
Happy New Year!
Balsamic Halibut
1/2 lb halibut fillet, preferably fresh
1/2 juice of lemon
1/2 c balsamic vinegar
1 tsp garlic, minced
1/2 tsp lemon pepper
Preheat grill. Place fillet in aluminum foil, add the lemon juice, vinegar, garlic and lemon pepper. Wrap fillet and set on grill over medium heat. Check fish after about 10 minutes; if it flakes and is white in color, it is done. If not, grill for another 5 minutes. Serves 2-4.
Mediterranean Tilapia
4 fillets of Tilapia, preferably fresh
1 T Cavendar's Greek Seasonings
1 T olive oil
juice of 1 fresh lemon
1 T garlic, minced
1 6 oz jar marinated artichoke hearts, sliced, with liquid
1 large fresh tomato, cut into 1-inch cubes
1/2 cup feta cheese
Preheat oven to 400 degrees.
Spray large casserole dish with non-stick spray and place fish in casserole. Mix together olive oil, fresh-squeezed lemon juice and garlic and pour over fish. Add sliced marinated artichoke hearts and juice from jar, top with tomatoes and feta cheese. Bake in covered casserole dish for about 15-20 minutes or until fish is flaky and looks done. Serves 4.
Seafood Ravioli Alfredo
1 25 oz bag of cheese-filled ravioli
1 16 oz jar Alfredo sauce
2 cups of cooked shrimp
1/2 cup imitation crab legs or 1 can lump crab meat
1 lemon, squeezed
1 T garlic, minced
2 T butter
1/2 tsp lemon pepper
1/2 cup shredded parmesan cheese
1-1/2 cup shredded cheddar cheese
Preheat oven to 350 degrees.
Boil ravioli according to package directions and place into a 9 x 13 baking pan. Add cooked shrimp and crab on top. Melt butter; add garlic, lemon pepper, fresh squeezed lemon juice and pour over seafood. Pour jar of Alfredo sauce on top of seafood and top with cheddar and parmesan cheeses. Bake for 30-40 minutes. Serves 6.
